SEDALIA’S
Sedalia’s is a project born out of love for the restaurants/restaurant-life that brought my husband I together & being able to create spaces that do not exist in our city quite yet. Food & family have a strong place in our hearts, one that we are proud to share with you today. Zack and I come from very different backgrounds; but our love for restaurants & the people that shaped our lives will always be our moving force. The Name Sedalia’s comes from Zack’s great-great-grandmother Sedalia Mae Walters. We both felt that the name embodied the expression of warmth, simplicity & happiness that we so wish to carry out in our little restaurant.
Sedalia’s is located inside our family’s Playground Equipment business, a family operation that has been a staple of 10th street & Oklahoma City, just east of the fair grounds, since 1947. We are an award-nominated, seafood restaurant featuring prestigious accolades & decorations as well as some of the cutest stray cats in the city! We are a concept that values deep care in our work and the work of our team, with the belief that representing the highest quality standards, ingredients that combined with skillful technique in an unassuming, casual environment, can deliver a positive memory. Some have called us “unique” or “weird” but we truly hope to be able to continue to share our work with our community to help bridge the many hands that help make this restaurant what it is. We love what we do and are so fortunate to be a family-owned and operated business. We pay our team fair wages and offer health insurance to help pursue long, significant careers. We all have walked from near and far to make this place a reality; From Oyster farmers, fishermen, local and not-so-local farmers, wine makers, our purveyors, our team; we are very happy to be here.
Zack Walters (Chef-Owner)
Zack is from Oklahoma and has worked his way in the industry from his culinary school days in San Francisco to owning his restaurant in Hollywood called Salt’s Cure; a project that he and his chef-partner nurtured & grew to the well reviews from LA times Irene Virbilia to the late Jonathan Gold. His approach to California cuisine, nose-to-tail animal butchery also earned him a spot in the NY magazine review by the late Josh Ozersky & the WSJ. His infinite passion for simple, honest cooking has brought him back home. Zack hopes to be able to create a relationship with the city & small chef-run spaces to further the narrative that is Oklahoma City today. On his “off” time he enjoys listening to Jazz, sipping wine, cooking, reading, fixing stuffs & spending time with his favorite trio…August, Theodore & Guinness!
Silvana Arandia-Walters (General Manager-Owner)
I was born in Cochabamba, Bolivia; My family and I migrated to the US when I was thirteen years old. After settling into our new home in Northern Virginia, I started working in restaurants to afford a trip to NYC. Once I fell in love with the city of dreams, I grew stronger in my passion for food and the way it unites people from all walks of life. Restaurants are very beautiful, unique places. Not to over romanticize them but they breath life into every neighborhood, they create a gathering place for diversion, nourishment & memories. I have been very, very fortunate to have worked in a variety of establishments and became inspired by some of the best people/mentors in the Hospitality Profession. My hope is to be able to create a space in our community that provides some of the warmth, authenticity and integrity that some of the best places provide. I have so much gratitude for OKC; the way we’ve been received has been with open arms, kind words of encouragement and appreciation! we simply couldn’t ask for more. I enjoy meeting people, cooking, dancing, traveling, calling my family on the phone, connecting, learning, EATING & laughing, so much laughing…My days are filled with my sweet boys August & our fur-babies, Guinness & Theodore.
